Ah... the joy of slow cooker cooking! It really is amazing. You put a bunch of ingredients in the pot, turn it on, and hours later, your meal is complete. It's like magic! I don't use my crockpot as much a I probably should, but I have a few meals that have quickly become our favorites. One of them is tonight's yums: Cuban Ropa Vieja. Skirt steak, peppers, onions, tomatoes, good stuff - easy and tasty! This is probably Jim's favorite meal these days (although the spaghetti sauce I've been making might be becoming his close second). Just served over rice, it's incredibly good. So now I just have to wait eight more hours to enjoy it. Well, they say patience is a virtue...

ReplyDeleteI'm Cuban and Ropa Vieja was a staple dinner at our house when we were growing up. My mother always made it in a pressure cooker, though, so this is very intriguing! I'm going to have to check it out!
